頑固な古典派から大きく脱皮
ニュイへ、ピュリニーへと拡大した大ドメーヌ
ヴォルネイのドメーヌ・ド・モンティーユといえば、古典的ワインの銘醸家として名の知れたドメーヌ。
映画「モンドヴィーノ」でも主役級で取り上げられたので、ご記憶の方も多いに違いない。
先代のユベールはディジョンでの弁護士が本業。というのも1947年にドメーヌを相続した時、ブドウ畑の面積はわずか3haしかなかった。
その後、息子のエティエンヌとともにブドウ畑を拡張し、1990年代には7haを超えるまでに広がった。
このエティエンヌもパリのクーパース＆ライブランド（現プライスウォーターハウス・クーパース）の会計士として働いていたが、2001年にブルゴーニュに戻り、シャトー・ド・ピュリニー・モンラッシェの経営に就くと同時に、ドメーヌ・ド・モンティーユの当主となった。
もっともエティエンヌ自身は1983年からドメーヌのワイン造りに関与しており、1995年には実質的にドメーヌの主導権を握り、ブドウ栽培をビオロジックへと転換。父から子への継承は着々と進んでいたのである。
エティエンヌがフルタイムで経営にあたるようになってからというもの、ドメーヌの版図拡大は凄まじい。
1993年にはすでに、ピュリニー・モンラッシェ1級カイユレをジャン・シャルトロンから買い取っていたが、2004年にボーヌ1級エーグロ（白）、特級コルトン・クロ・デュ・ロワ、コルトン・シャルルマーニュを入手。
2005年にドメーヌ・デュジャックと共同でトマ・モワイヤールを買収し、コート・ド・ニュイにも進出した。
この時にヴォーヌ・ロマネ1級マルコンソール、ニュイ・サン・ジョルジュ1級オー・トレイ、特級クロ・ド・ヴージョをラインナップに加えている。
エティエンヌがドメーヌにもたらした最大の改革と功績は、1995年から有機栽培を始め、2005年から全ての自社畑のブドウ栽培をビオディナミ栽培へ移行させたことです。ユベールのワインが長期熟成を経て優美に成熟してゆくことで知られる一方、酒齢の若いうちは収斂性が感じられたのに対し、エティエンヌが実施したアプローチは、厳しい収量制限、有機肥料のみの使用、フェノール成分の成熟度合を慎重に見極めた収穫日の選択、醸造手法の緻密な微調整により、長期熟成力を損なうことなく、より豊かなアロマとシルキーで滑らかなテクスチャーを持つ酒齢の若いうちから打ち解けやすいワインを造ることでした。（ユベールがマストの発酵中、1日に6~8回ピジャージュし、ホールバンチ果汁を常に25~50％程の割合で使用していたのに対し、エティエンヌはピジャージュの回数を1日2回までに減らし、ホールバンチ果汁の使用比率は、0~100％まで幅を持たせ、ヴィンテージの質によって使用比率を判断しています。）歳月を経ても変わらなかったのは、新樽比率を控えめにしている点で、木樽熟成の期間は14~18か月程。通常通りの年であれば、無濾過・無清澄で瓶詰しています。
さらに2012年、エティエンヌが経営を任されていたシャトー・ド・ピュリニー・モンラッシェをオーナーの金融機関から買い取ってしまったのだ。
ただし、シャトーが所有していた特級モンラッシェとバタール・モンラッシェは、この買収に協力したシャトー・ラトゥールのフランソワ・ピノーに譲り、彼のドメーヌ・ドゥージェニーに加わることとなる。
白ワインのラインナップ拡充を見越して、エティエンヌはともにマイクロ・ネゴスのドゥー・モンティーユを運営していた妹のアリックスを、2006年から白ワインの醸造責任者に任命。
一方、赤ワインはエティエンヌがおもに監督するものの、全体のセラーマスターとしてアメリカ人のブライアン・シーヴが2010年に就任している。
こうしてあまりにも拡大したためヴォルネイの醸造施設では間に合わなくなり、現在は旧ロピトー・ミニョンが所有していたムルソーのセラーでワイン造りをしている。
一般にエレガントとされるヴォルネイでさえも、「いつ開くのかわからない」と言われたドメーヌ・ド・モンティーユのワインだが、今日では若いうちから香り高く、そしてタンニンもしなやかなものとなり、かつ長期熟成にも十分耐え得るスタイルへと大きく変化している。
全房を用いた醸造など、基本的にはユベール時代の様式を継承しながらも、より完熟したブドウを摘み取り、抽出の仕方や発酵温度の管理をより綿密に行うことで、現在のスタイルを築いた。
ムルソーのジャン・マルク・ルーロの元妻であるアリックスが手がける白ワインも秀逸。
シャトー・ド・ピュリニー・モンラッシェ所有のクリマがアリックスの手を経て、どのようなワインとなるのかも楽しみである。

○このリュリー・ブランはリュリーの北のほうにある“シャポニエール・デュ・ドゥス”という区画のブドウから造られる。丘の端の部分に植えられている。土壌は浅く、粘土質で石は無い。この畑はビオロジックで栽培され、樹齢は50年を越える。とはいえ、その樹齢だからといってコンディションに支障が出ることはない。熟成は12〜14か月。フレッシュさを出すため、熟成の最後の約4カ月はイノックスタンクで行う。○
☆Half has been made in stainless steel and half in 228l barrels. Lemon and lime colour, this has good personality for Rully, a little bit of fresh apple, the barrel component fills out the middle nicely, lemon zest to enliven the finish. ＜JM87-89＞☆
☆Here there is a whiff of the exotic on the aromas of white peach, melon and acacia blossom. The delicious, round and succulent medium weight flavors possess fine volume while the balanced and clean finish is supported by lemon-tinged acidity. This too should drink well early on.＜BH88＞☆

○マコネでもかなり急斜面の丘にある畑。偉大なブルゴーニュの白ワインのひとつである。南のブルゴーニュにおける象徴的なワインで、ソリュトレの岩とヴェルジッソンの岩にこの有名な畑は守られている。品種はシャルドネのみで、4つのコミューン（ソリュートレ・プイィ、フュッセ、シャントレ、ヴェルジッソン）にまたがり広がっている。○
☆This has ripe apple fruit touched with honey, but retains enough citrusy acidity on the palate to bring it into balance. The grapes were purchased from two producers, both certified organic, working three different sites. Half is fermented in stainless steel and half in large wood. Due to logistical pressures, staff are picking the vines in the Mâconnais earlier and earlier, and In 2019 it started on the 6th of September. Drinking Window: 2021-2029.＜DC90＞☆

●畑は、丘の麓にあり、ヴォーヌ・ロマネに向かって北に位置する。隣のヴォーヌ・ロマネのワインとの類似性が際立つ。アロマティックで豊かな花の香りを持ち、柔らかくてジューシー。軽やかなストラクチャーを持ち、比較的早い時期に飲み頃を迎える。●
★Aromas of peonies, orange rind, wild berries and sweet soil tones introduce the 2018 Nuits-Saint-Georges 1er Cru Aux Thorey, a medium to full-bodied, fine-boned and elegant wine that's beautifully balanced and structurally refined. This is very promising.＜WA91-93＞★
★Aux Thoreys is a relatively cool site close the town of Nuits-St-Georges that is influenced by the cool breezes wafting down from the Hautes Côtes. As such, it often produces elegant, refined Pinots with considerable grace and charm. This 60% whole bunch-fermented red from Brian Sieve is a case in point, with savoury rose petal and wild herb aromas, sculpted tannins and an earthy undertone.＜DC95＞★

●1級畑オー・トレイは、広大なニュイ・サン・ジョルジュの中でもヴォーヌ・ロマネ寄りに位置する畑です。ここで造られるワインは、ヴォーヌ・ロマネを彷彿とさせる繊細で豊かな香りと柔らかな味わいを持つのが特徴です。モンティーユの所有するオー・トレイ＜0.73ha＞は、他のドメーヌが所有するオー・トレイよりもヴォーヌ・ロマネに近い場所に位置する区画です。モンティーユの特徴であるバランスの良さとエレガンスが惜しみなく表現された、極めて繊細で優美な味わいをお愉しみいただけます。●
★Once again there is a beguiling elegance to the pure if spicier aromas of floral-inflected red currant and cherry scents. Once again there is beautiful delineation to the intensely stony medium weight flavors that deliver very fine length on the balanced and complex finish. This too is quite lovely.＜BH91-93＞★
★The 2017 Nuits Saint-Georges Aux Thorey 1er Cru has two-thirds whole cluster fruit and matures in 40% new oak. It has a refined and quite backward bouquet that demands encouragement, light sous-bois and crushed limestone scents percolating through the red berry fruit. The palate is medium-bodied with sappy red fruit. A firm grip in the mouth with a light oyster shell influence defining what is a very detailed and persistent finish. Very good potential here - superb.

★From the Vosne-Romanée side of Nuits, this 0.73ha parcel was part of the acquisition from Thomas-Moillard in 2005. As chef de cave, Brian Sieve opines: 'This is a linear Nuits-St-George, not a strength Nuits-St-George.' The wine has bright, slightly earthy dark fruit, firm tannins and great elegance on the persistent finish. Two thirds of the fruit is fermented as whole cluster.＜DC92＞★
★The 2019 Nuits Saint-Georges Aux Thorey 1er Cru, which is two-thirds whole cluster, has a very focused bouquet of elegant red cherry, raspberry and briary aromas, plus a hint of bay leaf and sous-bois. The palate is medium-bodied with a fine bead of acidity thanks to the calcareous soils, and displays superb tension and focus toward the finish. A gorgeous, ethereal Aux Thorey. ＜VN93-95＞★

●クロ・デュ・ロワは、コルトンの中でも最高級と言われており、1477年に最後の公爵シャルル・ル・テメレールが亡くなるまで、ブルゴーニュ公爵家が所有していた。完璧なグラン・クリュの要素を備えたワイン。ポテンシャル、複雑さ、深みがあり、どちらかというとアロマの複雑さやタンニンの質が特徴的なワインを生むコート・ド・ニュイの地理的影響を受けている。●
★The 2018 Corton Grand Cru Clos du Roi is showing superbly, delivering a complex bouquet of ripe cherries, raspberries, burning embers, grilled squab, black truffle and rich soil tones. On the palate, it's full-bodied, deep and concentrated, with an elegantly muscular chassis of powdery tannins, lively acids, and a long, resonant finish.＜WA92-95＞★
★From 75+ year old vines; 66% whole clusters.An exceptionally spicy nose also reflects plenty of floral elements along with notes of ripe but cool black cherry and plum. I very much like the sense of energy to the middle weight flavors that are not particularly dense but possess a lovely texture along with good minerality that suffuses the youthfully austere, highly complex and beautifully long finish. This too is excellent.＜BH92-94＞★
★The 2018 Corton Clos du Roi Grand Cru includes two-thirds whole bunch this year, and it is very well integrated into the blackberry and raspberry fruit. There is fine detail here. The palate is medium-bodied with crisp tannins, quite focused and full of tension. The detailed, saline, white-pepper-tinged finish lingers in the mouth. Recommended.＜VN92-94＞★
